I love tortillas in my house. Kids do, I do, Husband does. I love that we get whole grains without all the carbs of bread – and I also love the versatility of tortillas.
We tried out the Lunchbox Quesadillas for lunch the other day. I absolutely loved mine and devoured it – not a crumb left! The kids weren’t so keen on the actual filling – but in all fairness despite having devoured avocado as kids – they had NO interest in trying it this time around. Here is the recipe:
Ingredients
4 Slices NATURAL SELECTIONS™ Oven-Roasted Turkey Breast
4 DEMPSTER’S® Smart™ Tortillas
¼ cup (50mL) Salsa
¼ cup (50mL) Guacamole
½ cup (125mL) Shredded cheese
Directions
- DIVIDE turkey between two tortillas to cover tortillas.
- SPREAD salsa and guacamole over turkey and sprinkle with cheese. Top with remaining tortillas.
- GRILL each quesadilla in pan over medium heat, turning once, until golden and cheese is melted. Cut into wedges.
TIPS: Keeping the turkey and cheese against the tortilla, prevents the salsa from making the tortilla soggy.
HOWEVER – that is the beauty of quesadillas – the options are endless. Instead of the guacamole and salsa (I ate all of those), the kids had the NATURAL SELECTIONS™ Oven-Roasted Turkey Breast and leftover steamed broccoli cut up really fine. And they devoured it! Thumbs up all around!
We have since tried and loved the Dempsters tortillas quesadillas with:
- Corn, broccoli and cheese
- Leftover roast chicken (put through blender to make it fine), broccoli and cheese
- Kale, chicken and cheese
